Amami Kokuto Sugar Shochu is protected by the Japanese government, and Beni Sango may be the most famous of them all, having won “Best Shochu” at the 2021 and 2022 Tokyo Whisky & Spirits Competition, the first shochu to ever repeat as #1. That’s best "shochu,” not merely “best Amami Kokuto Sugar Shochu,” and there are over 5,000 brands produced annually in Japan. 

After a three-stage 17-day fermentation, Beni Sango is single-distilled in an atmospheric pot still. The shochu is aged in a mix of refilled American white oak and ex-sherry casks that spend their days and nights listening to classical music for 5+ years before being bottled after minimal dilution and filtration.
